1. Prepare the Meat

In a skillet over medium heat, cook the bacon until crispy. Remove and chop into small pieces. In the same skillet, cook the sausage until browned, breaking it up if using ground sausage. Heat the gyro meat until warmed through.

2. Mix the Eggs

In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

3. Cook the Omelet

In a large non-stick skillet, heat the olive oil or butter over medium heat. Pour in the egg mixture and let it cook undisturbed for a minute until the edges start to set.

4. Add the Fillings

Once the edges are set, add the cooked bacon, sausage, gyro meat, and cheese evenly over one half of the omelet.

5. Fold and Finish Cooking

Carefully fold the other half of the omelet over the fillings and let it cook for another 2-3 minutes until the cheese is melted and the omelet is cooked through.
