    Prepare Clam Butter

    In a saucepan, melt the butter over low heat. Add the clams and cook until they begin to open. Remove from heat and blend until smooth. Strain and set aside.

    Make Burnt Leek Oil

    Slice leeks thinly and rinse under cold water. In a skillet, heat olive oil over medium heat, add leeks, and cook until they are deeply browned. Remove from heat and let cool. Blend with additional olive oil and strain to create the burnt leek oil.

    Prepare Potato Crisps

    Thinly slice the potatoes and soak in water for 30 minutes. Drain and pat dry. Heat oil in a deep fryer or large pot, and fry the potato slices until golden and crispy. Drain on paper towels and season with salt and vinegar.

    Cook Striped Bass

    Season striped bass fillets with sea salt and black pepper. In a skillet, heat a small amount of oil over medium-high heat. Place the bass fillets skin-side down and cook for 4-5 minutes until the skin is crispy. Flip and cook for another 2-3 minutes until the fish is cooked through.

    Plating

    On a plate, place a portion of the striped bass, drizzle with clam butter, and add a small amount of burnt leek oil. Serve with the salt and vinegar potato crisps on the side.
