    Prepare the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot, add olive oil if necessary, then add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for an additional minute.

    Combine Ingredients

    Add the cooked white beans, thyme, bay leaves, chicken broth, and the reserved crispy bacon (chopped). Bring to a simmer.

    Add Lobster

    Once simmering, gently fold in the lobster meat and cook for about 5 minutes until heated through. Season with salt and pepper to taste.

    Prepare Persillade

    In a small bowl, mix chopped parsley, lemon zest, salt, and pepper to make the persillade.

    Serve

    Ladle the lobster cassoulet into bowls and top with a spoonful of persillade. Enjoy!
