For the Buttermilk Fried Maitake Mushrooms
Method
Preparation Steps
- 1
Marinate the Mushrooms
In a large bowl, combine the maitake mushrooms and buttermilk. Allow them to marinate for at least 30 minutes to enhance flavor and tenderness.
- 2
Prepare the Breading
In a separate bowl, mix the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.
- 3
Heat the Oil
In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Coat the Mushrooms
Remove the mushrooms from the buttermilk and let any excess drip off. Dredge each mushroom in the flour mixture, ensuring they are evenly coated.
- 5
Fry the Mushrooms
Carefully place the coated mushrooms into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- 6
Serve
Serve the buttermilk fried maitake mushrooms hot with dill pickles and dijon aioli on the side.
