    Prepare the Oysters

    Preheat the oven to 200°C (400°F). Shuck the oysters and place them on a baking tray. Ensure they are stable and not tipping over.

    Make the Bacon Sabayon

    In a pan, cook the bacon until crispy. Remove and chop finely. In a bowl, whisk together the egg yolks and white wine. Place the bowl over a pot of simmering water and whisk in the heavy cream until the mixture thickens. Stir in the chopped bacon and season with salt and pepper.

    Prepare the Herbed Breadcrumbs

    In a separate bowl, mix the breadcrumbs with melted butter, chopped parsley, grated Parmesan, salt, and pepper.

    Combine and Bake

    Spoon the bacon sabayon over each oyster. Top with the herbed breadcrumbs. Bake in the preheated oven for about 10-12 minutes or until the topping is golden brown and the oysters are cooked.

    Remove from the oven and let cool slightly before serving. Enjoy your Oysters Rockafeller!
