Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Cook the Leeks

In a large pot, melt 2 tablespoons of butter over medium heat. Add the sliced leeks and cook until they are softened, about 5 minutes.

Add the Mussels

Add the cleaned mussels to the pot along with the white wine, Dijon mustard, salt, and black pepper. Cover the pot and cook for about 5-7 minutes or until the mussels have opened.

Make the Mustard Butter

In a small bowl, mix the remaining 2 tablespoons of butter with Dijon mustard, chopped parsley, thyme, salt, and pepper.

Toast the Bread

While the mussels are cooking, toast the slices of crusty bread until golden brown.

Serve

Once the mussels are cooked, remove them from the heat and stir in the mustard butter. Serve the mussels in a bowl with the toasted bread on the side for dipping.
