Cook the Pasta

In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a saucepan, melt 4 tablespoons of butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk, ensuring no lumps form. Continue to stir until the sauce thickens.

Add Cheeses

Remove the sauce from heat and add the crumbled Danish blue cheese, shredded sharp cheddar cheese, salt, black pepper, and garlic powder. Stir until the cheeses are fully melted and the sauce is smooth.

Combine Pasta and Sauce

Add the cooked macaroni to the cheese sauce, stirring until well coated. Pour into a greased baking dish.

Prepare Brown Butter Breadcrumbs

In a small skillet, melt 4 tablespoons of unsalted butter over medium heat until it turns brown. Stir in the bread crumbs and cook until golden, about 3-4 minutes. Add parsley and salt to taste.

Assemble and Bake

Spread the brown butter breadcrumbs evenly over the macaroni and cheese. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until the top is golden brown and bubbly.
