Method

Marinating the Pork

Prepare the Marinade

In a bowl, mix minced garlic, chopped cilantro, lime juice, olive oil, cumin, salt, and black pepper.

Marinate the Pork

Place the pork tenderloin in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.

Preparing Yellow Masa Cake

Mix the Ingredients

In a mixing bowl, combine masa harina, baking powder, and salt. Gradually add water and olive oil until a smooth batter forms.

Cook the Masa Cake

Pour the batter into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes or until set.

Making Stewed Beans

Sauté the Aromatics

In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until soft.

Add the Beans

Stir in the black beans, cumin, salt, and black pepper. Cook for 10 minutes until heated through.

Preparing Calabrian Peperonata Sauce

Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced red and yellow bell peppers, and sliced onion. Cook until softened.

Add Flavors

Stir in minced garlic, Calabrian chili paste, salt, black pepper, and balsamic vinegar. Cook for an additional 5-7 minutes.

Grilling the Pork

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Pork

Remove the pork tenderloin from the marinade and grill for about 12-15 minutes, turning occasionally, until it reaches an internal temperature of 145°F (63°C).

Remove from the grill and let the pork rest for 5 minutes before slicing.
