Hot Fried Cauliflower Bites

Prepare the Cauliflower
Cut the cauliflower head into bite-sized florets and set aside.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper. Gradually add water until you have a smooth batter.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Cauliflower
Dip each cauliflower floret into the batter, allowing excess to drip off. Carefully place them into the hot oil and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Toss in Buffalo Sauce
In a large bowl, combine the fried cauliflower bites with buffalo sauce, tossing to coat evenly.

Serve the hot fried cauliflower bites with blue cheese dressing and pickled onions on the side.
