Instructions

  1. 1

    Caramelize the Onions

Heat olive oil in a skillet over medium heat. Slice the onion thinly and add to the skillet. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized. Remove from heat and set aside.

  2. 2

    Prepare the Arugula Aioli

In a bowl, mix mayonnaise with truffle oil, garlic powder, and black pepper. Fold in the arugula and mix until well combined. Set aside.

  3. 3

    Form the Sliders

In a large bowl, combine the ground beef with salt and pepper. Form into 4 small patties.

  4. 4

    Cook the Sliders

Heat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes per side, or until they reach your desired doneness.

  5. 5

    Assemble the Sliders

Slice the potato rolls in half. On the bottom half, place a beef patty, top with a slice of Pecorino cheese, a generous spoonful of caramelized onions, and a dollop of arugula aioli. Add the top of the roll and serve immediately.
