Prepare the Roasted Garlic Cream Sauce
In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add heavy cream and bring to a simmer. Reduce heat and simmer for 5-7 minutes until slightly thickened. Season with salt and pepper. Set aside.

Sauté the Mushrooms and Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the exotic mushrooms and sauté for about 5 minutes until they are golden brown. Add the spinach and cook until wilted. Season with salt and pepper. Remove from heat and set aside.

Make the Omelet
In a bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet used for the mushrooms, pour the eggs and cook over medium-low heat. Use a spatula to gently lift the edges as they set. Once the eggs are mostly cooked but slightly runny on top, add the mushroom and spinach mixture to one half of the omelet. Fold the other half over and continue cooking for another minute until fully cooked.

Serve
Plate the omelet and drizzle the roasted garlic cream sauce on top. Serve with a side of smashed potatoes and garnish with fresh parsley.
