Braised Short Ribs

    Preparation

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper.

    Searing the Ribs

    In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes. Add the minced garlic and sauté for an additional minute.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 2-3 minutes.

    Add Broth and Herbs

    Return the short ribs to the pot, add the beef broth, thyme, and bay leaves. Bring to a simmer.

    Braise in the Oven

    Cover the pot with a lid and transfer it to the preheated oven. Braise for about 2.5 to 3 hours, or until the meat is tender and falling off the bone.

    Serve

    Remove the short ribs from the pot and serve over Yukon potato puree.
