Directions

  1. 1

    Prepare the Caramelized Onions

In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until onions are caramelized and golden brown, about 20-25 minutes.

  2. 2

    Make the Beef Jus

Once the onions are caramelized, add the beef broth to the skillet. Bring to a simmer and let it reduce slightly for about 10 minutes. Season with salt and pepper to taste.

  3. 3

    Assemble the Sandwich

Slice the ciabatta rolls in half. Layer the thinly sliced roast beef on the bottom half of each roll. Top with caramelized onions and slices of Brie cheese.

  4. 4

    Melt the Cheese

Place the assembled sandwiches under a broiler for about 2-3 minutes, or until the Brie is melted and bubbly.

  5. 5

    Serve

Spread horseradish cream on the top half of the ciabatta rolls. Close the sandwiches and serve with a bowl of beef jus for dipping.
