Make the Dressing
In a blender or food processor, combine the white anchovies, minced garlic, Dijon mustard, lemon juice, olive oil, Parmesan cheese, salt, and black pepper. Blend until smooth and creamy.

Prepare the Croutons
Preheat the oven to 375°F (190°C). Toss the cubed ciabatta bread with olive oil, salt, and pepper. Spread on a baking sheet and toast in the oven for about 10-12 minutes or until golden brown.

Assemble the Salad
Chop the Romaine lettuce into bite-sized pieces and place in a large bowl. Drizzle the Caesar dressing over the lettuce and toss until well coated. Add the toasted croutons and toss again.

Serve
Divide the salad into serving bowls and top with additional grated Parmesan cheese if desired. Optionally, add grilled organic chicken or grilled shrimp for an extra charge.
