Prepare the Sweet Potato Waffle Fries
Preheat your oven to 425°F (220°C). Cut sweet potatoes into waffle fry shapes. Toss them in a bowl with olive oil, salt, and black pepper until evenly coated. Spread them in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.

Prepare the Sweet Chipotle Aioli
In a small bowl, mix mayonnaise and sweet chipotle sauce until well combined. Adjust seasoning to taste.

Assemble the Dish
Once the waffle fries are cooked, remove them from the oven. Pile the pulled pork or chicken tinga on top of the fries. Drizzle BBQ sauce over the meat, and garnish with chopped scallions. Serve with sweet chipotle aioli on the side for dipping.
