Pork Belly Preparation

    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern. Rub the pork belly with olive oil, salt, and black pepper. Place it on a baking sheet, skin side up.

    Roast the Pork Belly

    Roast in the preheated oven for about 2.5 to 3 hours, until the skin is crispy and the meat is tender. You can baste the pork belly with its own fat halfway through.

Apple BBQ Sauce Preparation

    Make the Sauce

    In a saucepan over medium heat, combine apple cider, ketchup, brown sugar, apple cider vinegar, smoked paprika, garlic powder, and salt. Stir until the mixture is well combined and bring to a simmer. Reduce heat and let it cook for about 15-20 minutes until thickened.

Pickled Red Onion Preparation

    Pickle the Onions

    In a bowl, combine the sliced red onion, white vinegar, water, sugar, and salt. Stir to dissolve the sugar and salt. Let it sit for at least 30 minutes or refrigerate for up to a week.

    Slice the roasted pork belly and serve it topped with the apple BBQ sauce, pickled red onions, and a handful of micro greens.
