Pork Belly Preparation

Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern. Rub the pork belly with olive oil, salt, and black pepper. Place it on a baking sheet, skin side up.

Roast the Pork Belly
Roast in the preheated oven for about 2.5 to 3 hours, until the skin is crispy and the meat is tender. You can baste the pork belly with its own fat halfway through.

Make the Sauce
In a saucepan over medium heat, combine apple cider, ketchup, brown sugar, apple cider vinegar, smoked paprika, garlic powder, and salt. Stir until the mixture is well combined and bring to a simmer. Reduce heat and let it cook for about 15-20 minutes until thickened.
