Cooking Instructions

  1. 1

    Prepare the Beef

Season the beef chuck roast with salt and black pepper. Heat olive oil in a large pot over medium heat, then sear the beef on all sides until browned.

  2. 2

    Braised Beef

Add enough water or broth to cover the beef halfway, then bring to a boil. Reduce heat to low, cover, and let it simmer for about 2-3 hours, or until the beef is tender and pulls apart easily.

  3. 3

    Grill the Pineapple

While the beef is braising, preheat a grill or grill pan. Grill the pineapple rings for about 2-3 minutes on each side until caramelized and slightly charred.

  4. 4

    Make Coconut Aioli

In a bowl, combine coconut milk with salt and pepper to taste. Mix well to create the coconut aioli.

  5. 5

    Prepare Toppings

Thinly slice the jalapeño, chop fresh cilantro, and slice the scallions.

  6. 6

    Assemble the Dish

Once the beef is ready, shred it with two forks. Serve the shredded beef on a plate or in a sandwich, topped with grilled pineapple, spicy sweet chili sauce, coconut aioli, jalapeño slices, cilantro, and scallions.
