Method

Crust Preparation

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated with butter.

  2. 2

    Press the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup for even pressure. Bake for 10 minutes, then remove from the oven and set aside to cool.

Cheese Filling Preparation

  1. 3

    Mix Cheese Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy.

  2. 4

    Add Remaining Ingredients

Add vanilla extract, sour cream, and eggs to the cream cheese mixture. Beat until well combined and smooth.

  3. 5

    Pour into Crust

Pour the cheese filling into the cooled crust, smoothing the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for an hour.

  4. 6

    Chill the Cheesecake

After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight.

Wild Berry Topping Preparation

  1. 7

    Prepare the Topping

In a medium saucepan, combine mixed wild berries, granulated sugar, lemon juice, cornstarch, and water. Cook over medium heat, stirring gently until the mixture starts to bubble and thicken, about 5-7 minutes.

  2. 8

    Cool the Topping

Remove from heat and let the berry topping cool completely before spreading it over the chilled cheesecake.

  3. 9

    Serve

Once the berry topping is cooled, spread it evenly over the cheesecake. Slice and serve chilled.
