Cake Preparation
- 1
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until completely melted and smooth. Remove from heat and set aside to cool slightly.
- 2
Mix Eggs and Sugar
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale. This should take about 3-4 minutes.
- 3
Combine Mixtures
Gradually add the melted chocolate mixture to the egg mixture, gently folding it in with a spatula until fully combined.
- 4
Add Dry Ingredients
Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Carefully fold until just combined, being careful not to overmix.
- 5
Prepare Ramekins
Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with flour, shaking out the excess flour. Place the ramekins on a baking tray.
- 6
Fill Ramekins
Evenly distribute the batter into the prepared ramekins, filling each about 3/4 full.
- 7
Bake the Cakes
Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.
