Preparing the Lobster

Cook the Lobster
In a large pot, bring salted water to a boil. Add the lobster tails and cook for 8-10 minutes until they turn bright red and are cooked through. Remove from water and let cool.

Prepare the Lobster Meat
Once the lobster tails are cool enough to handle, remove the meat from the shells and chop it into bite-sized pieces.

Combine Ingredients
In a bowl, mix together mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, chopped parsley, garlic powder, and paprika. Season with salt and black pepper to taste.

Cover the remoulade sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Assembling the Po'boy Sandwich

Prepare the Bread
Slice the French baguettes in half lengthwise without cutting all the way through, creating a pocket for the fillings.

Spread a generous amount of remoulade sauce on the inside of each baguette. Fill with shredded lettuce, sliced tomato, pickles, and the sautéed lobster mixture.
