    Make the Roux

    In a large heavy pot, heat the olive oil over medium heat. Gradually whisk in the flour until smooth. Stir continuously for about 20-30 minutes until the roux turns a dark brown color, similar to chocolate.

    Sauté Vegetables

    Once the roux is ready, add the chopped onion, green bell pepper, and celery to the pot. Cook for about 5-7 minutes, stirring frequently, until the vegetables are softened.

    Add Proteins and Liquids

    Stir in the sliced Andouille sausage and cook for another 5 minutes. Then, add the chicken broth, diced tomatoes, minced garlic, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring to a boil.

    Simmer

    Reduce the heat to low and let the gumbo simmer for about 30 minutes, stirring occasionally.

    Add Shrimp

    Add the peeled and deveined shrimp to the pot and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

    Final Seasoning

    Taste and adjust seasoning with additional salt and black pepper if needed.

Serving

    Garnish and Serve

    Ladle the gumbo into bowls and garnish with chopped green onions. Serve hot, ideally with rice on the side.
