Main Ingredients

Seasonal Vegetables

Method

Preparing the Marinade

  1. 1

    Make the Marinade

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

While the salmon is marinating, wash and slice the zucchini, bell peppers, and trim the ends of the asparagus.

  2. 4

    Season the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Grill for about 4-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, add the seasoned vegetables to the grill. Grill for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.

Serving

  1. 8

    Plate the Dish

Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate.

  2. 9

    Garnish

Optionally, drizzle with additional lemon juice or a sprinkle of fresh herbs for added flavor before serving.
