Prepare the Oysters
Rinse the fresh oysters under cold water to remove any grit. Pat them dry with a paper towel.

Soak in Buttermilk
Place the oysters in a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix together the all-purpose flour, cornmeal, Cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Oysters
Remove the oysters from the buttermilk, allowing any excess to drip off. Dredge each oyster in the flour mixture, coating them evenly.

Fry the Oysters
Carefully place the coated oysters into the hot oil in batches. Fry for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Slice the French bread or Po'boy rolls lengthwise, leaving a hinge on one side.

Spread a generous amount of mayonnaise inside each roll.

Layer the shredded lettuce and sliced tomatoes on top of the mayonnaise.

Place the fried oysters on top of the lettuce and tomatoes.

Drizzle with hot sauce to taste. Close the sandwich and serve immediately.
