Preparing the Fish

    Prepare the Coating

    In a shallow bowl, combine the all-purpose flour, cornmeal, salt, and black pepper.

    Prepare the Egg Wash

    In another bowl, whisk together the egg and milk until well combined.

    Coat the Fish

    Dip each flounder fillet first into the egg wash, letting the excess drip off, then dredge it in the flour and cornmeal mixture, pressing lightly to adhere.

Frying the Fish

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

    Fry the Fish

    Carefully place the coated flounder fillets in the hot oil. Fry for 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assembling the Sliders

    Prepare the Tomato

    Slice the large tomato into thin rounds.

    Assemble the Sliders

    On each slider bun, spread 1 tablespoon of mayonnaise and 1 tablespoon of Thousand Island dressing. Layer a lettuce leaf, a fried flounder fillet, and a tomato slice on each bun. Top with the other half of the bun.
