Method

Preparing the Fish

    Marinate the Fish

    In a large bowl, combine the buttermilk with the fish fillets. Make sure the fish is well coated. Cover and refrigerate for at least 30 minutes to an hour for best flavor.

    Prepare the Breading

    In a separate bowl, mix together the flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper. This will be your breading mixture.

    Heat Oil for Frying

    In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Fish

    Remove the fish from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring it is fully coated.

    Fry the Fish

    Carefully place the breaded fish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Assembling the Po'boys

    Prepare the Baguette

    Slice the French baguette or hoagie rolls lengthwise, leaving one side attached to create a hinge.

    Add the Lettuce

    Layer shredded lettuce on the bottom of the bread to create a bed for the fish.

    Add the Fried Fish

    Place 2-3 pieces of fried fish on top of the lettuce in each sandwich.

    Top with Tomatoes and Pickles

    Add sliced tomatoes and pickles on top of the fish.

    Finish with Remoulade Sauce

    Generously drizzle remoulade sauce over the top of the fillings, then close the sandwich.

    Cut the po'boys in half and serve immediately while hot, accompanied by extra remoulade on the side if desired.
