Preparation

    Prepare the Seafood

    Rinse the white fish fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper. Set aside.

    Prepare the Vegetables

    Wash and slice the zucchini, halve the cherry tomatoes, and dice the red bell pepper. Mince the garlic and chop the parsley. Set all the vegetables aside.

Cooking

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the diced red bell pepper and zucchini, cooking for about 5 minutes until they start to soften.

    Add Tomatoes and Seasonings

    Stir in the halved cherry tomatoes, salt, black pepper, and red pepper flakes. Cook for an additional 3-4 minutes until the tomatoes begin to soften.

    Cook the Seafood

    Push the sautéed vegetables to the side of the skillet and add the remaining 2 tablespoons of olive oil. Place the seasoned white fish fillets in the skillet and cook for about 3-4 minutes on one side until golden brown.

    Add Shrimp and Mussels

    Flip the fish fillets carefully and add the shrimp and mussels to the skillet. Pour in the white wine and lemon juice. Cover the skillet and let it cook for 5-7 minutes until the shrimp are pink and the mussels have opened.

    Finish and Serve

    Sprinkle the chopped parsley over the seafood and vegetables. Serve hot, spooning the mixture over rice or pasta if desired.
