Method
Preparing the Chicken
- 1
Marinate the Chicken
In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
- 2
Prepare the Breading
In a shallow dish, mix the all-purpose flour and cornstarch together. This will be used to coat the chicken before frying.
- 3
Fry the Chicken
Heat the vegetable oil in a deep skillet or fryer over medium-high heat. Remove the chicken from the marinade, allowing excess buttermilk to drip off, then dredge each piece in the flour mixture, coating evenly. Fry the chicken in batches for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove and place on paper towels to drain excess oil.
Assembling the Sandwich
- 4
Prepare the Bread
Slice the French bread or hoagie rolls open lengthwise, creating a pocket for the fillings. If desired, lightly toast the bread in the oven or on a skillet.
- 5
Build the Sandwich
Spread a generous amount of spicy mayonnaise on both sides of the bread. Layer shredded lettuce, sliced tomatoes, and pickles on the bottom half of each sandwich. Place the fried chicken on top of the vegetables. Close the sandwich and press down gently.
- 6
Serve
Cut the sandwiches in half if desired and serve immediately, enjoying the crispy chicken and fresh toppings.
