Calamari Preparation

Clean the Calamari
Begin by cleaning the fresh calamari. Remove the head, innards, and cartilage, then peel off the outer skin. Rinse under cold water and cut the body into rings.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Prepare the Egg Mixture
In another bowl, whisk together the eggs and buttermilk until well combined.

Dredge the Calamari
Dip the calamari rings first into the egg mixture, allowing excess to drip off, then coat them in the flour mixture. Place the coated calamari on a plate.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari in batches, being careful not to overcrowd the pot. Cook for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes
Add the crushed tomatoes to the saucepan and stir well.

Season the Sauce
Add dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Adjust Seasoning
Taste the sauce and adjust the seasoning if necessary. Remove from heat and set aside.
