Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into even fries, approximately 1/4 inch thick.

    Soak the Fries

    Place the cut fries into a large bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Frying

    Heat the Oil

    In a large deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Fry the Fries (First Fry)

    Carefully add a batch of fries to the hot oil, frying them for about 4-5 minutes until they are soft but not browned. Remove them and let them drain on paper towels.

    Fry the Fries (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the fries again in batches for another 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels.

Seasoning

    In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, dried oregano, dried thyme, and black pepper.
