Cooking Instructions

  1. 1

    Marinate the Beef

In a bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the beef tenderloin, making sure it is well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

  2. 2

    Cook the Beef

Preheat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing thinly.

  3. 3

    Caramelize the Onions

In the same skillet, add a little olive oil if needed and slice the onion thinly. Cook over medium heat until golden brown and caramelized, about 10-15 minutes.

  4. 4

    Assemble the Tacos

Warm the corn tortillas in a dry skillet. Layer with sliced beef, caramelized onions, green chiles, diced avocado, shredded asadero cheese, and chopped cilantro. Serve immediately.
