Corn Cakes

1. Prepare the Corn Cake Batter

In a large mixing bowl, combine cornmeal, flour, baking powder, and salt. In another bowl, whisk together milk, eggs, and melted butter. Combine wet and dry ingredients, then fold in corn kernels and green onions.

In a bowl, combine diced tomatoes, red onion, cilantro, lime juice, jalapeño, and salt. Mix well and set aside to let flavors meld.

Guacamole

5. Make Guacamole

In a bowl, mash the avocados. Stir in lime juice, salt, minced garlic, chopped cilantro, and diced tomato. Mix until smooth but still chunky.

Jumbo Prawns

6. Cook the Jumbo Prawns

In a skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 1 minute. Add prawns, paprika, salt, and pepper. Cook until prawns turn pink and opaque, about 3-4 minutes.
