Making the Tamale Dough

    Prepare the Dough

    In a large bowl, mix masa harina, baking powder, and salt. Gradually add vegetable broth and vegetable oil, mixing until a soft dough forms. Set aside.

Preparing the Filling

    Cook the Vegetables

    In a skillet over medium heat, sauté onion and garlic until translucent. Add zucchini, yellow squash, and corn. Cook until tender. Stir in queso de Oaxaca, cilantro, lime juice, salt, and pepper. Remove from heat.

Making the Mole Amarillo

    Prepare the Mole

    In a pot, soak dried yellow chilies in hot water for 15 minutes. Drain and blend with garlic, onion, and vegetable broth until smooth. Pour into a pan, add cumin and salt, and simmer for 10 minutes.

Assembling Tamales

    Wrap the Tamales

    Soak corn husks in warm water for 30 minutes. Take one husk, spread a layer of dough, add filling, and fold the husk. Place upright in a steamer and steam for 1 hour.
