Method

For the Chips

  1. 1

    Prepare the Tortillas

Cut each corn tortilla into 6 wedges.

  2. 2

    Heat the Oil

In a large pot, heat the vegetable oil over medium-high heat until hot.

  3. 3

    Fry the Chips

Carefully add tortilla wedges in batches to the hot oil. Fry until golden and crispy, about 2-3 minutes per batch.

  4. 4

    Drain and Season

Remove the chips with a slotted spoon and drain on paper towels. While still warm, sprinkle with salt.

For the Fire Roasted Salsa

  1. 5

    Roast the Vegetables

On a grill or stovetop grill pan, roast the Roma tomatoes, jalapeño, and red onion until charred, about 5-7 minutes.

  2. 6

    Blend the Salsa

Once roasted, chop the vegetables and add them to a blender. Add cilantro, lime juice, and salt. Blend until desired consistency is reached.

  3. 7

    Taste and Adjust

Taste the salsa and adjust seasoning if necessary.
