Fire Roasted Salsa

    Roast the Vegetables

    Preheat your grill or oven broiler. Place Roma tomatoes, onion, garlic, and jalapeño on the grill or under the broiler. Roast until charred and softened, about 10-15 minutes.

    Blend the Salsa

    Remove the vegetables from heat, let them cool slightly, then chop them. Combine the roasted vegetables, lime juice, cilantro, and salt in a blender or food processor. Pulse until desired consistency is reached.

Queso

    Melt the Cheeses

    In a medium saucepan over low heat, combine Velveeta cheese, cream cheese, and milk. Stir until melted and smooth.

    Add Flavor

    Stir in the diced tomatoes with green chilies, chili powder, cumin, and salt. Cook for an additional 5 minutes, stirring occasionally.

Fresh Guacamole

    Prepare the Avocados

    Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

    Mix Ingredients

    Add lime juice, diced red onion, tomato, cilantro, and salt to the bowl. Mash the ingredients together with a fork or potato masher to your desired consistency.
