Cooking Instructions

  1. 1

    Sear the Pork

In a large pot or Dutch oven, heat a little oil over medium-high heat. Add the cubed pork shoulder and sear until browned on all sides. Remove the pork and set aside.

  2. 2

    Sauté Vegetables

In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and cook for an additional minute.

  3. 3

    Combine Ingredients

Return the seared pork to the pot. Add the diced green chiles, hominy, chicken broth, cumin, oregano, salt, and black pepper. Stir to combine.

  4. 4

    Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 2 hours, or until the pork is tender.

  5. 5

    Adjust Seasoning

Taste and adjust seasoning with additional salt and pepper if needed.

  6. 6

    Serve

Ladle the posole into bowls and garnish with chopped cilantro, lime wedges, sliced radishes, and diced avocado.
