Pork Preparation

    Marinate the Pork

    In a bowl, mix achiote paste, olive oil, minced garlic, orange juice, lime juice, salt, and black pepper. Rub this mixture all over the pork shoulder and pork loin. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

    Roast the Pork

    Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover with foil. Roast for 3-4 hours until the pork is tender and can be easily shredded. Remove from oven and let it rest for 20 minutes before slicing.

Sandwich Assembly

    Assemble the Sandwiches

    Slice the roasted pork thinly. Take a piece of French or Cuban bread, layer with sliced pork, Gruyere cheese, pickles, and a generous spread of mango mustard. Top with another piece of bread.

    Grill the Sandwich

    Heat a panini press or skillet over medium heat. Grill the sandwiches for 3-4 minutes on each side, until the cheese is melted and the bread is golden brown.

Fries or Onion Rings Preparation

    Prepare Fries

    For fries, fry the cut potatoes in hot oil until golden and crispy. Drain and season with salt and chile powder.

    Prepare Onion Rings

    For onion rings, coat onion slices in batter and deep fry until golden brown. Drain and season with salt.
