    Cook the Bacon

    In a large pot, cook the chopped applewood bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.

    Sauté the Vegetables

    In the same pot, add olive oil if needed. Sauté the onion, celery, and garlic until softened, about 5 minutes.

    Add the Potatoes and Stock

    Add the diced potatoes, fish stock (or clam juice), bay leaves, and thyme. Bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.

    Add Seafood

    Stir in the clams, shrimp, gulf fish, smoked tomatoes, and heavy cream. Simmer for an additional 5-7 minutes until the seafood is cooked through.

    Season and Serve

    Season the chowder with salt and black pepper to taste. Serve hot, garnished with crispy bacon.
