    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to form French fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch.

    Preheat the Oven

    Preheat the oven to 425°F (220°C).

    Dry and Season

    After soaking, drain and thoroughly dry the fries with paper towels. In a large bowl, toss the fries with olive oil, truffle oil, salt, and black pepper.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Add Parmesan

    Remove the fries from the oven and immediately sprinkle the aged Parmesan cheese over the hot fries. Toss gently to combine.
