Preparing the Duck

    Prepare the Duck Breasts

    Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season with salt and black pepper.

    Make the Bourbon Glaze

    In a saucepan, combine bourbon, brown sugar, soy sauce, minced garlic, and Dijon mustard. Bring to a simmer over medium heat and reduce until thickened, about 10 minutes.

    Cook the Duck

    Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium and cook until the skin is crispy and golden brown, about 6-8 minutes. Flip and cook for another 3-4 minutes. Brush with bourbon glaze during the last few minutes of cooking.

Preparing the Wild Rice

    In a pot, combine wild rice and water. Bring to a boil, then reduce to a simmer and cover. Cook for 40-45 minutes until the rice is tender.

    In a small pan, melt butter and toast the chopped pecans until fragrant. Stir into the cooked wild rice.

Cooking the Vegetables

    In a skillet, heat olive oil over medium heat. Add shredded cabbage and thumbelina carrots; season with salt and pepper. Sauté until tender, about 5-7 minutes.

Making the Orange Sauce

    In a saucepan, combine orange juice and zest. In a small bowl, mix cornstarch with water until smooth, then add to the saucepan. Cook over medium heat until thickened, stirring constantly. Stir in honey and remove from heat.

Serving

    Slice the duck breast and arrange it over the toasted pecan wild rice. Serve with sautéed savoy cabbage and thumbelina carrots drizzled with orange sauce.
