Preparing the Duck

Prepare the Duck Breasts
Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season with salt and black pepper.

Make the Bourbon Glaze
In a saucepan, combine bourbon, brown sugar, soy sauce, minced garlic, and Dijon mustard. Bring to a simmer over medium heat and reduce until thickened, about 10 minutes.

Cook the Wild Rice
In a pot, combine wild rice and water. Bring to a boil, then reduce to a simmer and cover. Cook for 40-45 minutes until the rice is tender.

Prepare the Orange Sauce
In a saucepan, combine orange juice and zest. In a small bowl, mix cornstarch with water until smooth, then add to the saucepan. Cook over medium heat until thickened, stirring constantly. Stir in honey and remove from heat.

Slice the duck breast and arrange it over the toasted pecan wild rice. Serve with sautéed savoy cabbage and thumbelina carrots drizzled with orange sauce.
