    Prepare the short ribs

    Season the short ribs with salt and black pepper. In a large pot, heat olive oil over medium-high heat and sear the short ribs on all sides until browned. Remove and set aside.

    Cook the aromatics

    In the same pot, add diced onions and minced garlic. Sauté until onions are translucent.

    Deglaze the pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 5 minutes.

    Braise the ribs

    Return the short ribs to the pot and add the beef broth, thyme, and bay leaves. Bring to a simmer, cover, and reduce heat to low. Braise for 2.5 to 3 hours until the meat is tender.

    Prepare the vegetables

    In the last 30 minutes of cooking, add the portobello mushrooms and cherry tomatoes to the pot.

    Prepare the grits

    In a separate pot, cook the creamy white grits according to package instructions.

    On a plate, serve the braised short ribs over a bed of creamy white grits, topped with arugula and the blistered tomatoes and mushrooms.
