Prepare the Vegetable Filling

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the red onion and sauté for about 2-3 minutes until translucent.

Assemble the Enchiladas

Preheat Oven
Preheat your oven to 375°F (190°C).

Fill the Tortillas
Spread a small amount of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, place a generous amount of the vegetable filling in the center, sprinkle with cheese, then roll the tortilla tightly and place it seam-side down in the baking dish.

Repeat Filling
Repeat the process with the remaining tortillas and filling until the baking dish is filled.

Top with Sauce and Cheese
Pour the remaining enchilada sauce over the filled tortillas, ensuring they are well covered. Sprinkle the remaining cheese on top.
Bake the Enchiladas

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
