    Prepare the Ingredients

    Chop the pork shoulder into large chunks, slice the chorizo and smoked sausage into rounds, and chop the bacon into small pieces. Dice the onion, mince the garlic, chop the bell pepper, and dice the tomatoes. Peel and chop the carrot into small pieces.

    Cook the Bacon

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.

    Brown the Meat

    Add the pork shoulder chunks to the pot and brown on all sides. Then, add the chorizo and smoked sausage, cooking until browned. Remove the meat and set aside.

    Sauté the Vegetables

    In the same pot, add the onion, garlic, bell pepper, and carrot. Sauté until the vegetables are softened, about 5 minutes.

    Combine Ingredients

    Return the browned meats to the pot with the sautéed vegetables. Stir in the diced tomatoes, black beans, chicken broth, bay leaves, paprika, cumin, salt, and black pepper.

    Simmer the Feijoada

    Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2 hours, stirring occasionally, until the pork is tender and the flavors meld together.

    Final Touches

    Once done, remove the bay leaves. Adjust seasoning with more salt and pepper if needed. Stir in the crispy bacon before serving.
