Filet Mignon

Garlic Mashed Potatoes

Seasonal Vegetables

Method

Filet Mignon

  1. 1

    Prepare the Steaks

Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes.

  2. 2

    Season the Steaks

Rub both sides of the steaks with olive oil, then season generously with salt, black pepper, and fresh rosemary.

  3. 3

    Cook the Steaks

Preheat a skillet over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

  4. 4

    Rest the Steaks

Remove the steaks from the skillet and let them rest for 5-10 minutes before serving.

Garlic Mashed Potatoes

  1. 5

    Prepare the Potatoes

Peel and cut the russet potatoes into quarters. Place them in a large pot and cover with water.

  2. 6

    Cook the Potatoes

Bring the water to a boil and cook the potatoes for about 15-20 minutes until fork-tender.

  3. 7

    Prepare the Garlic

In a small saucepan, melt the butter over low heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

  4. 8

    Mash the Potatoes

Drain the cooked potatoes and return them to the pot. Add the garlic butter mixture, milk, salt, and black pepper. Mash until smooth and creamy.

Seasonal Vegetables

  1. 9

    Prepare the Vegetables

Trim the asparagus and peel the carrots. Cut the carrots into thin strips.

  2. 10

    Cook the Vegetables

In a skillet, heat olive oil over medium heat. Add asparagus and carrots, season with salt and black pepper, and sauté for about 5-7 minutes until tender but still crisp.
