Marinade

Steak and Vegetables

Method

Marinade Preparation

  1. 1

    Make the Marinade

In a bowl, whisk together olive oil, lime juice, soy sauce, minced garlic, ground cumin, chili powder, salt, and black pepper until well combined.

  2. 2

    Marinate the Steak

Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours.

Cooking Steak and Vegetables

  1. 3

    Prepare the Vegetables

While the steak is marinating, slice the bell peppers and onion into thin strips.

  2. 4

    Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill or sear the steak for 5-7 minutes on each side, or until desired doneness is reached. Remove from heat and let rest for 5 minutes before slicing into thin strips.

  3. 5

    Cook the Vegetables

In the same skillet, add 1 tablespoon of olive oil and heat over medium heat. Add the sliced bell peppers and onion, cooking for about 5-7 minutes until they are tender but still slightly crisp.

  4. 6

    Warm the Tortillas

While the vegetables are cooking, warm the tortillas in a separate pan for about 1 minute on each side or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.

Serving

  1. 7

    Assemble the Fajitas

To serve, place a portion of sliced steak and cooked vegetables onto each warm tortilla. Optional: add toppings such as sour cream, guacamole, or salsa.
