For the Pork Belly

    Prepare the Pork Belly

    Preheat your oven to 150°C (300°F). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub salt, black pepper, garlic powder, and smoked paprika all over the pork belly, ensuring it gets into the scored sections.

    Cook the Pork Belly

    Heat olive oil in a large skillet over medium-high heat. Sear the pork belly skin-side down for about 5-7 minutes or until the skin is crispy. Transfer the pork belly to a baking dish and cover tightly with foil. Roast in the oven for about 2-2.5 hours until tender.

    Crisp the Pork Belly

    After roasting, remove the foil and turn the oven to broil. Broil the pork belly for an additional 5-10 minutes until the skin is blistered and crispy. Remove from the oven and let it rest for 10 minutes before slicing.

For the Pickled Jalapeños

    Prepare the Pickling Liquid

    In a small saucepan, combine white vinegar, water, sugar, and salt. Bring the mixture to a boil, stirring until the sugar and salt are dissolved.

    Pickle the Jalapeños

    Slice the jalapeños into thin rings and place them in a glass jar. Pour the hot pickling liquid over the jalapeños, ensuring they are fully submerged. Seal the jar and let it cool to room temperature, then refrigerate for at least 1 hour before using.

For the Spicy Aioli

    Make the Spicy Aioli

    In a mixing bowl, combine mayonnaise, Sriracha, lemon juice, and minced garlic. Whisk together until smooth and well combined. Adjust the Sriracha to taste for desired spiciness.

For Assembling the Sliders

    Assemble the Sliders

    Slice the slider buns in half. Place a generous piece of sliced pork belly on the bottom half of each bun. Top with pickled jalapeños, a dollop of spicy aioli, and fresh cilantro. Place the top half of the bun on each slider.

    Serve the sliders warm with extra spicy aioli on the side for dipping. Enjoy!
