Method

Chicken Marinade

  1. 1

    Prepare the Marinade

In a large bowl, combine the olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Whisk until well blended.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling the Chicken

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

  2. 4

    Grill the Chicken

Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

  3. 5

    Rest the Chicken

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

Vegetable Preparation

  1. 6

    Prepare the Vegetables

In a separate bowl, toss the sliced zucchini, bell pepper, and carrots with olive oil, salt, and black pepper until evenly coated.

  2. 7

    Grill the Vegetables

Place the vegetables on the grill alongside the chicken during the last 5-7 minutes of cooking time, turning occasionally until they are tender and have grill marks.

Serving

  1. 8

    Plate the Dish

Slice the grilled chicken and serve it alongside the grilled seasonal vegetables. Enjoy your Pollo a la Parrilla!
