Filling Preparation

    Sauté Onion and Garlic

    In a skillet over medium heat, add a little oil and sauté the diced onion until it becomes translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

    Mix Filling Ingredients

    In a mixing bowl, combine the sautéed onion and garlic with the shredded chicken, cumin, chili powder, salt, black pepper, and chopped cilantro. Mix well until all ingredients are evenly combined.

Sauce Preparation

    Prepare Enchilada Sauce

    If using store-bought enchilada sauce, simply pour it into a bowl. If making homemade, prepare your favorite enchilada sauce recipe.

Assembly

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Fill Tortillas

    Warm the corn tortillas in a dry skillet for a few seconds on each side or microwave them briefly to make them pliable. Spoon about 1/4 cup of the filling mixture onto each tortilla, roll it up, and place it seam-side down in a greased baking dish.

    Add Sauce and Cheese

    Once all tortillas are filled and placed in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle the shredded cheese over the sauce.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove from the oven, let cool for a few minutes, and serve warm with your favorite toppings such as sour cream, avocado, or additional cilantro.
