Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until the mixture resembles wet sand.

Form the crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer. Gradually add granulated sugar and beat until well combined.

Add remaining filling ingredients
Add sour cream, vanilla extract, and eggs one at a time, mixing on low speed until just combined. Finally, add all-purpose flour and mix until smooth.

Combine filling and crust
Pour the cream cheese filling into the cooled crust. Smooth the top with a spatula.
Baking and Cooling

Bake the cheesecake
Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.

Chill the cheesecake
After cooling in the oven, remove the cheesecake and refrigerate for at least 4 hours or overnight to set completely.

Prepare the topping
Before serving, wash the mixed berries and pat them dry. In a small bowl, toss the berries with powdered sugar to coat lightly.

Garnish the cheesecake
Remove the cheesecake from the springform pan and top with the sugared berries. Garnish with fresh mint leaves if desired.
