Calamari Preparation

Clean the Calamari
Begin by cleaning the fresh calamari under cold water. Remove the head and innards, then cut the body into rings. Pat dry with paper towels.

Prepare the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Prepare the Buttermilk Mixture
In another bowl, whisk together the eggs and buttermilk until smooth.

Dredge the Calamari
Dip the calamari rings into the buttermilk mixture, allowing excess to drip off. Then, coat them in the flour mixture, ensuring they are evenly covered.

Fry the Calamari
In a large, deep skillet, heat the vegetable oil over medium-high heat. Once hot, fry the calamari in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Make the Sauce
Add the canned crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper to the saucepan. Stir well and bring to a simmer.

Add Fresh Basil
Once the sauce is simmering, stir in the fresh basil leaves. Allow to cook for an additional 10-15 minutes, stirring occasionally.
