Prepare the Turkey
Preheat your oven to 325°F (165°C).

Rub the whole turkey with olive oil, ensuring even coverage. Sprinkle the salt, black pepper, garlic powder, and onion powder all over the turkey, both inside and out.

Place the turkey in a roasting pan, breast side up. Cover it loosely with aluminum foil.

Roast the turkey in the preheated oven for about 3 to 3.5 hours, or until the internal temperature reaches 165°F (74°C). Remove the foil in the last 30 minutes to allow the skin to crisp up.

Once cooked, remove the turkey from the oven and let it rest for 30 minutes before pulling the meat off the bones.

Assemble the Sandwich
While the turkey is resting, prepare the sandwiches.

Take slices of bread and spread mayonnaise on one side of each slice.

Layer the pulled turkey on one slice of bread, followed by provolone cheese, lettuce, tomato slices, and onion slices.

Top with another slice of bread, mayonnaise side down, to complete the sandwich.
